Oliver's Cider and Perry

Oliver's make a selection of fine Herefordshire ciders and perries with an emphasis on "balance" and "character" coupled with "drinkability".

Based around the spontaneous ferment of selected varieties of cider apple and perry pear from fruit grown in Herefordshire and the surrounding 3 Counties orchards.

Nominally referred to as "minimal intervention", Oliver's strive to "take what the fruit gives", respecting the great heritage and traditions of the past but with an eye to innovating for the future. What that really means is we mill and press great fruit, expose the juice to marauding and hungry wild yeasts and then for our part blend and bottle the resulting ferments.

Duvel Belgian Beer

Got a thirst that can’t be beat? We’ll see about that! Because Vedett Extra Pilsner is brewed to quench even the most stubborn of thirsts. Offering full-bodied refreshment from start to finish.

Don’t be fooled by its unassuming straw colour and pure white head. Behind this premium lager’s modest exterior lies a complex yet smooth character. Subtly balancing both malt and hops with a lingering fruitiness and subtle notes of vanilla.

And a slightly bitter aftertaste that politely suggests, “Another?”

Ascension Cider

Matt has been making Cider for nearly ten years. Over this time, his cider making has grown somewhat from making batches in his Mum’s shed, but the recipes, experimentation, and general process is still pretty much the same.

From taking out a book on homebrewing from the local library and experimenting from fermenting everything from store-bought grape juice to tropical “fruit and barley” squash, experimentation in the name of alcohol production and alchemy has always been part of the game.

The Kernel Brewery

We brew pale ales, dark ales, lagers and mixed fermentation beers: sometimes focused on the aromas, flavours and bitterness of hops; the complex warmth and layers of roasted malts; the clarity of cold fermentations; or the acidity, tannin, and texture contributed by mixed fermentations, by time and barrels, wild yeast and bacteria. All guided by the principles of simplicity and balance.
